π° Braided Hazelnut Loaf Recipe
π§ Dough Ingredients:
400 g flour (all-purpose or bread flour)
60 g sugar
7 g active dry yeast (1 packet)
1/2 tsp salt
150 ml warm milk
2 eggs (1 for dough, 1 for brushing)
60 g soft butter
1 tsp vanilla extract (optional)
Zest of 1 lemon or orange (optional)
π° Filling:
150 g ground hazelnuts (toasted if possible)
100 g sugar (or brown sugar)
1 tsp cinnamon (optional)
1 tsp vanilla
2β3 tbsp milk or cream (to make it spreadable)
1 egg white (optional, helps bind the filling)
β¨ Optional Glaze:
100 g icing sugar + 1β2 tbsp milk
Crushed hazelnuts or pearl sugar to decorate

Make the dough:
Mix the warm milk, sugar, and yeast. Let sit for 10 min until foamy.
In a large bowl, mix flour, salt, and lemon zest. Add in the yeast mix, 1 egg, vanilla, and soft butter.
Knead until smooth and elastic (about 10 minutes). Cover and let rise 1β1.5 hours until doubled.
Prepare the filling:
Mix ground hazelnuts, sugar, vanilla, cinnamon, and egg white. Add milk little by little until it becomes a spreadable paste.
