2 chicken breasts (cut into bite-sized pieces)
2 tbsp butter
3 cloves garlic (minced)
1 cup cooked rice
½ cup chicken broth
½ tsp paprika
½ tsp dried thyme (or oregano)
Salt & black pepper (to taste)
½ cup frozen peas (or any veggies of choice)
¼ cup grated Parmesan (optional)
Fresh parsley for garnish
