Peach Cobbler Cheesecake Recipe
Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 tsp ground cinnamon
1/2 cup unsalted butter, melted
For the Cheesecake Layer:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1/4 cup sour cream
1/4 cup heavy cream
For the Peach Topping:
4-5 ripe peaches (peeled and sliced)
1/4 cup granulated sugar
1/2 tsp ground cinnamon
1 tbsp lemon juice
1 tbsp cornstarch (optional, to thicken)
For the Streusel Topping:
1/2 cup all-purpose flour
1/4 cup rolled oats
1/4 cup brown sugar
1/2 tsp ground cinnamon
1/4 cup unsalted butter, cubed
Instructions:
1. Prepare the Crust:
Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan or a 9-inch round pan.
In a medium bowl, combine the graham cracker crumbs, sugar, and cinnamon.
Add the melted butter and stir until the mixture is evenly combined and resembles wet sand.
Press the mixture firmly into the bottom of the prepared pan to form an even crust.
Bake the crust for 8-10 minutes, then remove it from the oven and let it cool while you prepare the cheesecake layer.
2. Prepare the Cheesecake Layer:
In a large bowl, beat the softened cream cheese and granulated sugar together with an electric mixer until smooth and creamy.
Add the eggs, one at a time, beating well after each addition.
Mix in the vanilla extract, sour cream, and heavy cream until smooth and well combined.
Pour the cheesecake batter over the cooled crust in the springform pan, spreading it evenly.
3. Prepare the Peach Topping:
In a medium saucepan, combine the sliced peaches, granulated sugar, cinnamon, and lemon juice. Stir to combine.
Cook the peaches over medium heat for about 5-7 minutes, stirring occasionally, until they soften and release their juices.
If you’d like a thicker topping, dissolve 1 tablespoon of cornstarch in 2 tablespoons of water, then stir it into the peach mixture. Cook for an additional 2-3 minutes until the topping thickens.
Remove from heat and set aside to cool.
