Cherry Cheesecake Lush Dessert
Ingredients:
For the crust:
1 1/2 cups graham cracker crumbs (about 10-12 graham crackers, crushed)
1/4 cup granulated sugar
1/2 cup (1 stick) unsalted butter, melted
For the cheesecake layer:
8 oz cream cheese, softened
1 cup powdered sugar
1/2 cup heavy whipping cream
1 tsp vanilla extract
For the cherry topping:
1 can (21 oz) cherry pie filling (or fresh cherries, if preferred)
Optional: Fresh whipped cream for garnish
Instructions:
For the crust:
Prepare the crust:
In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter.
Press the mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust. Use the back of a spoon or the bottom of a glass to pack it down tightly.
Place the crust in the fridge to chill while you prepare the other layers.
For the cheesecake layer:
Make the cheesecake filling:

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add the powdered sugar and vanilla extract, and mix until fully combined.
In a separate bowl, whip the heavy whipping cream until stiff peaks form (you can do this with a hand mixer or stand mixer).
Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
Layer the cheesecake filling:

Once the crust has chilled, spread the cheesecake filling evenly over the graham cracker crust in the 9×13-inch dish.
Smooth the top with a spatula to ensure an even layer.
