Heat butter in a large skillet over medium-high heat.
Add chicken pieces, season with salt, pepper, paprika, and thyme. Sauté for 5-6 minutes until golden and cooked through.
Stir in minced garlic and cook for 30 seconds until fragrant.
Pour in chicken broth and let simmer for 2 minutes.
Add cooked rice and frozen peas, stirring well to combine. Cook for another 1-2 minutes.
Sprinkle with Parmesan (if using) and garnish with fresh parsley.
