Sweet Potato Pie
Ingredients:
For the pie filling:
2 medium sweet potatoes (about 1 lb), peeled and cubed
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger (optional)
1/4 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
1/2 cup evaporated milk (or whole milk)
1/4 cup heavy cream (optional, for a richer pie)
For the crust:
1 pre-made pie crust (or homemade, if preferred)
Instructions:
Cook the sweet potatoes:
Place the peeled and cubed sweet potatoes in a pot of water. Bring to a boil and cook until tender, about 15-20 minutes.
Drain the sweet potatoes and mash them with a fork or potato masher until smooth. You should have about 1 1/2 cups of mashed sweet potatoes.
Prepare the filling:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, cinnamon, nutmeg, ginger (if using), and salt.
Add the vanilla extract, eggs, evaporated milk, and heavy cream (if using). Whisk until the mixture is smooth and fully combined.
