Fried Lemon Pepper Salmon Sticks with Old Bay Blue Cheese
Ingredients:
For the Salmon Sticks:
1 lb fresh salmon fillet (skin removed)
1 cup all-purpose flour
1 cup breadcrumbs (preferably panko for extra crunch)
1 tbsp lemon zest (from about 1 lemon)
1 tsp lemon pepper seasoning
1 tsp garlic powder
1/2 tsp smoked paprika (optional, for added flavor)
Salt and pepper to taste
2 eggs, beaten
1-2 tbsp olive oil (or vegetable oil) for frying
Lemon wedges, for serving
For the Old Bay Blue Cheese Dipping Sauce:
1/2 cup blue cheese crumbles
1/4 cup mayonnaise
2 tbsp sour cream
1 tbsp Old Bay seasoning
1 tbsp lemon juice (freshly squeezed)
1 tsp hot sauce (optional, for a bit of heat)
Salt and pepper, to taste
Instructions:
For the Salmon Sticks:
Prepare the Salmon:
Cut the salmon fillet into “sticks” (about 1 to 1.5 inches wide). Try to keep the pieces even for uniform cooking.
Set up breading station:
In one shallow bowl, add the flour and season it with salt, pepper, lemon pepper seasoning, garlic powder, and smoked paprika.
In another shallow bowl, beat the eggs.
In a third shallow bowl, add the breadcrumbs and lemon zest. Stir well to combine.
Bread the Salmon:
Coat each salmon stick first in the flour mixture, then dip it into the beaten eggs, and finally coat it in the breadcrumb mixture, pressing gently to make sure it sticks.
