Easy Oven-Baked Chicken Bites
Ingredients:
1 lb (about 450g) boneless, skinless chicken breasts (cut into bite-sized pieces)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika (smoked or regular)
1 teaspoon dried oregano (optional)
Salt and pepper to taste
1/2 cup breadcrumbs (panko or regular)
1/4 cup grated Parmesan cheese (optional)
Instructions:
Preheat the oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.
Prepare the chicken: Cut the chicken breasts into bite-sized pieces (about 1-2 inches). Pat them dry with a paper towel to ensure they crisp up well in the oven.
Season the chicken: In a large bowl, toss the chicken pieces with olive oil, garlic powder, onion powder, paprika, oregano (if using), salt, and pepper. Make sure the chicken is evenly coated with the seasoning mixture.
Coat with breadcrumbs: In a separate shallow dish, combine the breadcrumbs and Parmesan cheese (if using). Dip each seasoned chicken piece into the breadcrumb mixture, pressing gently to ensure they’re coated well.
Bake the chicken: Arrange the breaded chicken bites in a single layer on the prepared baking sheet. Leave a little space between each piece for even cooking.
Bake: Place the baking sheet in the oven and bake for 15-20 minutes, flipping the chicken halfway through, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
Serve: Once done, remove from the oven and serve with your favorite dipping sauce like ranch, honey mustard, or BBQ sauce.
Tips:
You can also add a bit of cayenne pepper for a spicy kick.
