Fold in the oats, chocolate chips, coconut, and nuts (if using). Mix everything evenly.
Scoop dough onto the prepared baking sheet, using about 1-2 tablespoons per cookie. Leave about 2 inches of space between each cookie.
Bake for 10-12 minutes or until the edges are golden brown and the centers are set. Keep an eye on them toward the end of baking, as they can quickly go from golden to overdone.
Cool on the baking sheet for a few minutes before transferring the cookies to a wire rack to cool completely.
