For the crust:
1 ½ cups graham cracker crumbs
2 tablespoons sugar
½ cup melted butter
For the filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
½ cup sour cream
¼ cup bourbon
For the bourbon caramel sauce:
1 cup sugar
6 tablespoons butter
½ cup heavy cream
2 tablespoons bourbon
½ teaspoon vanilla extract

Instructions:
Make the crust:

Preheat your oven to 325°F (163°C).
Combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
Press the mixture into the bottom of a springform pan (9-inch works well) to form the crust.
Bake for 10 minutes, then set aside to cool.
Make the filling:

Beat the cream cheese and sugar until smooth and creamy.
Add the vanilla extract, then beat in the eggs one at a time, making sure each is fully incorporated.
Add the sour cream and bourbon, and mix until well combined.
Pour the filling into the cooled crust and smooth the top.
