Ingredients:
For the chicken:
2 chicken breasts (boneless and skinless)
1 tbsp olive oil
1 tsp lemon pepper seasoning
1/2 tsp garlic powder
Salt and pepper to taste
For the pasta:
8 oz pasta (like fettuccine, penne, or spaghetti)
1 tbsp olive oil (for cooking the pasta)
2 tbsp butter
2 cloves garlic (minced)
Zest of 1 lemon
1/4 cup fresh lemon juice
1/2 cup heavy cream or half-and-half
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley (chopped, for garnish)
Instructions:
Cook the Pasta:
Boil a pot of salted water and cook the pasta according to the package directions. Drain the pasta, reserving a cup of pasta water for later.
Cook the Chicken:
While the pasta cooks, season the chicken breasts with lemon pepper seasoning, garlic powder, salt, and pepper.
Heat olive oil in a skillet over medium heat. Cook the chicken breasts for 6-7 minutes per side, until golden brown and fully cooked. Let the chicken rest for a few minutes before slicing it thinly.
