Heat the olive oil or butter in a large skillet over medium heat.
Remove the chicken from the marinade, letting any excess liquid drip off. Discard the marinade.
Cook the chicken breasts for 6-7 minutes per side or until the internal temperature reaches 165°F (74°C), and the chicken is golden brown on the outside. Once cooked, remove the chicken from the skillet and set it aside.
Make the Creamy Sauce:
In the same skillet, add the heavy cream and Dijon mustard, stirring to combine. Let the sauce simmer on medium-low heat for 2-3 minutes until it thickens slightly. Stir occasionally to prevent it from burning.
Taste and adjust seasoning with more salt and pepper if needed.
Serve:
Return the cooked chicken breasts to the skillet and spoon some of the creamy sauce over the top.
Let it simmer together for a few minutes so the chicken absorbs some of the flavors.
Garnish with fresh herbs like parsley, thyme, or rosemary before serving.
